AU GRATIN CHEESY POTATO BAKE
INGREDIENTS- 4 russet potatoes
- 1/2 cup plain Greek yogurt
- 1/4 cup butter
- 2 1/2 cups shredded cheddar cheese (divided)
- 1/2 cup milk
- salt and pepper, to taste
- 1 Tablespoon dry chives - optional garnish
- Preheat oven to 350 degrees F.
- Wash and peel your russet potatoes and cut them into thin slices.
- Lay them in a 9 x 9 inch pan, that has been sprayed with non stick cooking spray.
- Prepare the sauce, by combining the plain Greek yogurt, butter, 2 cups cheddar cheese, and milk in a pan, over medium heat. Stir continually until smooth.
- Pour the sauce over the potatoes, and garnish with salt, pepper, and extra cheese.
- Place in the oven and bake for 20-25 minutes, or until the potatoes are soft.
- Remove from oven and garnish with dried chives, if desired.
- Serve immediately.
